This steel strikes that balance between performance and practicality. The upswept edge profile makes for a nice and easy “Rock Chop”. I’ve always been a big fan of tall heels (not like that), a tall heel makes for excellent knuckle clearance on the chopping board. Food releasing convex edge geometry on this one, this knife will be an absolute kitchen laser!
