Apex Ultra is phenomenal steel, and Food release is the goal with this sort of grind, the hollows in the blade allowing air between the blade and the food, reducing “sticktion”. A challenging grind to achieve never mind to have it look presentable and tidy in the finish. Tricky Business!

I wanted a loud handle, and i got it, HBA Galaxy Resin & Fat Carbon Bolster, it took a nice polish and will last for many years. A piece of Fat Carbon Fibre up front for a bit of contrast too.
