The final knife of 2025 to come out of my workshop. Food release is the goal with this sort of grind, the hollows in the blade allowing air between the blade and the food, reducing “sticktion”. A challenging grind to achieve never mind to have it look presentable and tidy in the finish. Tricky Business!
This Japanese style K-Tip chef knife is made from arguably the best knife steel about, Damasteel. Known for its fine edge taking capability and excellent edge retention it strikes that balance between performance and practicality. Paired with an ergonomic handle in my signature style, this knife is ready to get stuck into a bit of food prep in your kitchen. I wanted a loud handle, and i got it, double dyed Mango stabilized to the highest degree, it took a nice polish and will last for many years. A piece of Formula 1 Carbon Fibre up front for a bit of contrast too.
