This is the new and improved Bullitt Petty. The steel is 14c28n stainless steel, a great steel in terms of edge retention and sharpenability, stainless so it will stay looking smart too. The word Petty from the french word Petit, meaning small, well describing this more compact sized chef knife. Known for its fine edge taking capability and good edge retention this steel strikes that balance between performance and practicality. The upswept edge profile makes for a nice and easy “Rock Chop”. Paired with an ergonomic handle in my signature style, this knife is ready to get stuck into a bit of food prep in your kitchen. A much reached for all rounder, the Bullitt is a staple in my kitchen.

THE IMPROVEMENTS: My previous models were good all rounders too but as with everything, through the years i have felt this petty could be even better. Better how? Well, in terms of being a more well rounder small chef knife. The way i went about the improvement was to add a touch of length, bump up the heel height to 50mm and most importantly to add 0.5mm to the thickness of the steel.

Can 0.5mm make that much of a difference though now, be honest? Honestly, It absolutely does, and I knew it would. This knife now feels bang on. More pronounced tapers, an added feeling of mass, it’s so much better.

And, The best bit? All of these improvements come at no extra cost, the price stays at €290 which in my opinion is a fine big bang for your buck. Of course I’m slightly biased, but then again it’s not often that something improves but stays at the same price, especially these days.

The new Bullitt is a real banger.
